Detox Recipe: Chicken & Zucchini Poppers

 

Whether or not you’re doing Dr. Morrison’s 30-Day Daily Benefit® detoxification program, these poppers are a delicious, healthy low-carb dish that could not be easier to make. Enjoy 4 as a meal or 1-2 as a protein-rich snack. They’re a particularly good choice for those mid-afternoon moments when you need some fuel. Our Health Coach Debra Kaplan cooked these up for our last Daily Benefit® Spring Detox group meeting and they were a hit!

Yields 4-5 servings

Ingredients
1 lb. ground chicken breast
2c grated zucchini (leave peel on)
2-3 green onions, sliced
3-4 Tbsp cilantro, minced
1 clove garlic
1 tsp salt
1 tsp pepper
Optional: 3/4 tsp cumin
Olive oil or coconut oil for cooking

Instructions
1. Preheat oven to 400ºF.
2. Toss chicken with zucchini, green onion, cilantro, garlic, salt and pepper (and cumin, if using). Mixture will be quite wet.

To cook on the stovetop (ideal if you have the time!):
1. Heat a drizzle of oil in medium pan over medium heat. Use a small scoop or heaping tablespoon to scoop meatballs into pan. Cook 8-10 at a time for about 5-6 minutes on the first side. Flip and cook an additional 4-5 minutes, or until golden brown and the centers are cooked through.

To Bake:
1. Drizzle a bit of oil onto a baking sheet. Scoop meatballs onto the greased pan. Drizzle a bit of additional oil over the meatballs. Bake 20-25 minutes, or until cooked through. If desired, place under broiler for an additional 2-3 minutes or until browned on top.
2. Enjoy warm – delicious with Zucchini Hummus!
