Baked Lemon Salmon


• 2 x 6 oz salmon fillets
• 2 cloves garlic, minced
• 1/2 bunch parsley
• 3 tablespoons extra virgin olive oil
• juice from 1/4 lemon
• sea salt and black pepper

Servings: 4

In a medium bowl, prepare marinade by mixing garlic, extra virgin olive oil, sea salt, black pepper, lemon juice and parsley. Place salmon fillets in a medium glass baking dish, and cover with the marinade. Marinate in the refrigerator about 30 minutes. Preheat oven to 375º F. Place fillets in parchment paper, cover with marinade, and seal it up. Place sealed salmon in the glass dish, and bake 30-35 minutes, until easily flaked with a fork.
